Bếp Chay Thanh Nhẹ: Canh dưa cải chay - Hồng Hương (Vietnamese pickled mustard greens soup)

Canh dưa cải chay
Hồng Hương / Việt Nam Ăn Chay


Nguyên liệu: (2 phần ăn)

  • 1 1/2 chén dưa cải, thái sợi
  • 1 quả cà chua, cắt làm 4
  • 1 nấm loa kèn, thái lát
  • 1/4 quả chanh
  • 9 lát đạm chay màu trắng (khoảng 1/2 chén)

Gia vị:

  • 5 lát gừng, băm nhỏ, khoảng 1/2 muỗng cà-phê
  • 1 muỗng cà-phê bột nêm chay
  • 1/2 muỗng cà-phê tiêu đen
  • Dầu ăn

Thực hiện:

1. Đạm chay ngâm nước nóng khoảng 10 phút cho mềm. Vắt ráo nước, băm nhỏ. Trộn đạm chay với bột nêm chay và tiêu cho thấm.

Bắc chảo, lửa vừa. Khi chảo nóng, cho 1/2 muỗng canh dầu ăn vào. Phi gừng băm nhỏ cho thơm. Sau đó thêm đạm chay vào xào khoảng 1 phút. Tắt lửa.


2. Cho vào chén, để sang một bên.










3. Bắc nồi, lửa vừa. Cho 1/2 muỗng canh dầu ăn vào. Thêm cà chua. Xào khoảng 1 phút.








4. Thêm nấm loa kèn vào xào tiếp, khoảng 1 phút nữa.









5. Cho 1 1/2 chén nước sôi vào nồi.










6. Thêm dưa cải. Vắt chanh.










7. Thêm đạm chay. Khuấy đều nhẹ tay. Tắt bếp.









8. Dọn ăn nóng với cơm, hoặc bún.

Example of veg protein slices (white)

Example of mushroom seasoning
Ingredients:

  • 1 1/2 cups pickled mustard greens, cut into thin strips
  • 1 medium tomato, quartered 
  • 1 king oyster mushroom, sliced
  • 1/4 lime
  • 9 slices vegan protein (white color), about 1/2 cup

Seasonings:

  • 5 slices fresh ginger, chopped, about 1/2 teaspoon
  • 1 teaspoon mushroom seasoning
  • 1/2 teaspoon ground black pepper
  • Cooking oil

Directions:

  1. Soak veg protein slices in hot water for 10 minutes to soften. Squeeze out excess water. Finely chop. Season with 1 teaspoon mushroom seasoning and 1/2 teaspoon ground black pepper.
  2. Place skillet at medium-high heat. Add 1/2 tablespoon cooking oil and ginger. Sauté for about 30 seconds to release the aroma of ginger. 
  3. Add veg protein, sauté for 1 minute, then turn off stove. Pour into a small bowl. Set aside.
  4. In a pot, heat 1/2 tablespoon cooking oil over medium heat. Add tomato and sauté for about 1 minute.
  5. Add king oyster mushroom slices, continue sautéeing another minute.
  6. Add 1 1/2 cups boiling water to the pot. Add pickled mustard greens and squeeze in the lime.
  7. Add veg protein. Stir evenly and gently. Turn off stove.
  8. Serve hot with steamed rice or bún (rice vermicelli).
