Bếp Chay Thanh Nhẹ: Cà tím kho tiêu - Hồng Hương (Braised Peppered Eggplant)

Hồng Hương thích các món ăn chay sử dụng vật liệu tương đối dễ tìm, tuy không cầu kỳ nhưng gần với thiên nhiên hơn là thức ăn chế biến hóa học (processed food), và có khi nhờ đơn giản mà lại ngon.

  1. 2 quả cà tím vừa, thái khúc, rửa sạch, cho vào nồi nấu xăm xắp nước, lửa cao. 
  2. Khi sôi, bớt lửa, đậy nắp lại. 
  3. Khi cà mềm, nêm 2 muỗng canh mật thùa (hoặc đường thuần chay), 4 muỗng canh nước tương. Nêm cho vừa khẩu vị. (Nếu bạn quen ăn chay, có thể dùng bột nêm thảo mộc, nước chấm nguyên chất chay, dầu nấm hào chay v.v., những gia vị thường dùng hàng ngày. HH nấu cách này cho các bạn ngoại quốc, có khi tìm gia vị Á Đông không dễ.)
  4. Hai tép hành lá thái nhỏ, cho vào nồi cà, đảo nhẹ tay. Tắt lửa. 
  5. Rắc tiêu lên trên mặt cà. 
  6. Cuối cùng, cho vài lát ớt xanh (hoặc đỏ) lên trên.

Dùng với cơm nóng (và canh chua chay!)

Braised Peppered Eggplant

I like vegan dishes with easy-to-find ingredients. This is one of those.

  1. Cut 2 medium eggplants into 1-inch pieces. 
  2. With high heat, cook in water, enough to top the surface of the eggplants. 
  3. When the water is boiling, reduce heat and cover the pot with a lid. 
  4. When the eggplants are soft, season with 2 tablespoons of agave nectar (or vegan sugar) and 4 tablespoons of soy sauce. Season to taste. (If you are already vegan, you can use the seasonings that you're familiar with, for example, mushroom seasoning, vegan fish sauce, or vegetarian oyster mushroom sauce, liquid aminos, and so on. We're just using simple ingredients here in case those are hard to find for some.)
  5. Mince two stalks of green onions. Add to the pot; stir gently and evenly. Turn off the oven. 
  6. Sprinkle ground black pepper on top. 
  7. Finally, add a few slices of green (or red) chili pepper.

Serve with hot steamed rice (and Vietnamese vegan sour soup!)
