Bếp Chay Thanh Nhẹ: Cơm Chiên Thuần Chay (Vegan Fried Rice)

Món cơm chiên thuần chay này do chị của Hồng Hương Junior mua tặng. Cơm rất ngon và HH nổi tiếng là thích cơm chiên, nhất là loại mua về nhà thưởng thức.

HH có lần học được bí quyết chiên cơm ngon, xin được chia sẻ. Mình nấu cơm trước, để qua đêm, hôm sau mới chiên, như thế cơm sẽ khô một tí và hạt cơm rời ra, nghe nói như vậy mới là cơm chiên đúng điệu. Cà-rốt, đậu petit pois dùng tươi thì tốt hơn. Mình xào chung với "ham" chay và xá xíu chay, có bán tại các tiệm chay; nếu không có thì dùng đậu hủ chiên cũng ngon. Cho vào cơm và chiên lên. Quan trọng là nêm một tí đường trước (nhớ mua loại thuần chay, không dùng xương bò để lọc), sau đó nêm muối và nước tương. Mình trang hoàng bằng rau ngò và rắc tiêu, mời cả nhà cùng xơi.

Cơm chiên thuần chay ăn ngon, chắc bụng và tốt bụng.

Vegan MoFo IV Day 13: Vegan Fried Rice

I'm a self-proclaimed connoisseur of vegan fried rice. That is just a fun way of saying... I dig vegan fried rice! In my travels, I would invariably sample vegan fried rice in each city or town that I happened to be. Whether it's Vienna, Austria; Paris, France; London, UK; New York City, USA; there is always a restaurant that can make vegan fried rice. Nowadays, the choices are even better for vegans than ever before: vegan restaurants truly abound, so you can be assured that your meals are animal-free (and freeing the animals).

My sister got this yummy vegan fried rice for me from a vegan restaurant. (Um.. being my sister, she must have known that I like fried rice!) It is so good. If you like Chinese food, I think you will like it. I know it's not an authentically Vietnamese dish, but there's no border when it comes to food. In general, me thinks we should have no borders, fences, and weapons. So to all Chinese friends, we love you very much and we love your vegan food!

A chef once showed me (and millions of other people) how to make good vegan fried rice. Basically, you need to cook the rice the night before and use it the next day, so that the rice is a little dry and that each grain can be separate (meaning not clumped together). Here, we can tell that fresh carrots and peas were used. Stir fry those and mock ham plus barbecue gluten or fried tofu. Then add the mixture to the rice and fry. The key is to add a pinch of vegan sugar first. Then add a pinch of salt and soy sauce later. That's it.
